Easy Crockpot BBQ Shredded Chicken Tacos with Mango Coleslaw
Prep Time: 15 Minutes | Cook Time: 3 to 4 Hours on High or 6 to 8 Hours on Low in Crockpot | Servings: 4 Servings
INGREDIENTS:
½ Red Small Onion Chopped
2 tsp Red Wine Vinegar
2 lbs (around 4 Count) Chicken Breasts without skin
1 Cup Low Sodium Chicken Broth
2 Cups (16 oz Jar) 5-Point BBQ Sauce (your choice of sweet, regular, hot or fire)
2 Cups of Shredded Three Cheese
8 Flour Tortillas (if desired, you can use corn tortillas or taco shells)
1 Cup Mango Cole Slaw (optional)
DIRECTIONS:
- Toss onions with vinegar in bowl and let stand 10 minutes.
- Place skinless chicken breasts in bottom of crockpot. Pour chicken broth and 5-Point BBQ Sauce over chicken. Make sure chicken is covered with sauce and broth.
- Drain vinegar from onions and add put chopped onions on top of chicken in crock pot.
- Cover and cook on low for 6 to 8 hours or high for 3-4 hours. Chicken should be a temp of 165°F.
- Remove chicken from crockpot and shred with two forks.
- Warm tortillas in a fry pan on stove top or in microwave for 10 seconds.
- Place cole-slaw in tortillas and top with bbq chicken and cheese.

Mango Coleslaw

INGREDIENTS:
6 Tbps of Mayonnaise
4 Tbps Limes Juice
2 Tsp Sugar
¾ Cup Fresh Cilantro
14 Ounce Pckg of Cole Slaw Mix 1 Mango (peeled and slice into thin slices)
½ Small Red Onion Thinly Sliced Salt if Desired
DIRECTIONS:
- In food processor put mayo, lime juice, ¼ Cup cilantro, and 1 Tbsp water. Pulse until smooth.
- Roughly chop remaining cilantro. Toss with coleslaw mix, mango, red onion and the remaining dressing from food processor. Salt if desired.

Seafood and Sausage Kabobs
Prep Time: 25 Minutes | Cook Time: 10 Minutes | Serves: 4-6
INGREDIENTS:
1-12 Ounce Can Pineapple Chunks
8 Large Fresh Mushrooms (washed)
12 Large Uncooked Shrimp, Pealed and Deveined
1 lb of Smoked Sausage
8 Large Cherry Tomatoes
1 Large Sweet Red Onion Cut in Chunks
1 Large Green Pepper Cut in Chunks
½ Cup 5-Point BBQ Sauce (your choice of Sweet, Hot, Regular or Fire)
DIRECTIONS:
- Heat Grill.
- Drain pineapple, reserve juice.
- Soak wooden skewers in water and set aside or use metal skewers.
- Take each skewer and alternate shrimp, pineapple chunk, tomato, sausage, mushroom, onion, green pepper and repeat until skewer is full.
- Mix pineapple juice and bbq sauce. Set aside 1⁄3 cup of sauce.
- Place skewers on the grill and baste occasionally with sauce over medium heat for 10-15 minutes until vegetables are tender and shrimp is pink.
- Take skewers off grill and serve, putting a small bowl of sauce on the side for dipping sauce.

BBQ Meatloaf
Prep Time: 10 Minutes | Cook Time: 1 Hour | Servings: 8
INGREDIENTS:
2 lbs 80% fat ground beef
¼ Cup Plain Bread Crumbs
2 Egg 3 Tbsps 5-Point BBG Brisket Rub
¾ Cup 5-Point BBQ Sauce
¼ Tsp Smoked Paprika
1 Tsp Garlic Pepper
DIRECTIONS:
- Preheat oven to 350°F.
- Mix bread crumbs, egg, garlic powder, pepper, bbq sauce, and paprika in a bowl.
- Knead hamburger meat with ingredients until blended. Do not over mix.
- Shape the meat into a loaf and put in a loaf pan. If desired, top meat loaf with a small amount of bbq sauce.
- Bake meatloaf in oven for 55 to 60 minutes. Make sure internal temp reaches at least 160°F.
- When meat is done, let sit for ten minutes before serving.
